The Copenhagen-Hamburg trains go onto a ferry between Rødby & Puttgarten, one of the few places in Europe where trains still get shunted onto ships. It's a fascinating experience in its own right - you must leave the train and go upstairs into the ship's passenger accommodation during the crossing.
There are many possible options:
For example, from March to October you can leave Copenhagen at 17:42 arriving Hamburg around 22:16 (from €29), stay overnight in Hamburg, then take an 08:24 from Hamburg, change just once at Karlsruhe to arrive Paris Gare de l'Est at 16:35 (from €39).
Or you could leave Copenhagen at 13:42 all year round, change Hamburg to arrive Cologne 22:56, with fares from €39. Stay overnight in Cologne, then take a Thalys from Cologne to Paris. One leaves Cologne at 06:44 and arrives Paris Nord 09:59, another leaves Cologne at 08:44 and arrives Paris Nord 11:59, or there are later trains of course, all with fares starting at €35.
